Fudgy Avocado Brownies

Not only do avocados add a boost of healthy fats, they also intensify the flavor of chocolate and make these brownies ultra rich, and decadent. These gluten-free treats are so fudgy and moist, you won’t even remember how healthy they are! Total Time: 51 min. Prep Time: 15 min. Cooking Time: 36 min. Yield: 16 servings, 1 brownie each   Ingredients: Nonstick cooking spray 1 medium ripe avocado, mashed ¼ cup extra-virgin coconut oil, melted 1 large egg, lightly beaten ½ cup pure maple syrup (I used Roth’s) 1 tsp. pure vanilla extract or caramel extract ¾ cup unsweetened cocoa powder ½ tsp. sea salt (or Himalayan salt) ¼ cup gluten-free flour ⅓ cup dark chocolate chips Preparation: 1. Preheat oven to 350° F. 2. Line an 8 x 8-inch baking pan with aluminum foil. Lightly coat with spray. Set aside. 3. Combine avocado, oil, egg, maple syrup, and extract in a medium bowl; mix well. After having a triple bypass surgery, he came back strong to complete a round of P90X and Insanity and is closer and closer to achieving more goals he’s set for himself in 2012. Hear it in his words below: I have always been an athletic guy who enjoyed working out for most of my life. But middle age had crept up on me, and by the summer of 2010, I was in 3X shirts. I went shopping for pants right before I left for a trip to Ecuador in September of 2010. It was time to move up to 42 waist too. What a horrible feeling. “I Was 38 When I Knew I Had to Do Something”

At just 38 years old, Dominick G. was getting out of breath just trying to tie his shoes. His clothes were tight and uncomfortable, and he was getting tired very quickly when trying to play with his two boys. He knew something had to change. He started off with P90X. He had seen some friends and family get great results, so he knew it could work for him too. After 4 rounds of P90X, he was ready to move on, but not quit! Next up for him was Insanity. And after that, P90X2. He was getting amazing results, and he was NOT stopping there!! He packed in another round of Asylum, and has just now started Asylum: Volume 2. He dropped from 262 lbs to 194 – a total of 68 lbs lost in about a year and a half! He also dropped from a size 38 waist to a size 34. His resting heart rate dropped from 78 to 67. Throughout all of this, Dominick was suffering from acid reflux. But since adding Shakeology, he has rarely had to take medication for the reflux. His clothes fit great, he’s out on the football field out-performing the 20-somethings, and best of all, he can play with his kids again without getting tired. Nice work, Dominick! Your dedication to the programs truly paid off....

Rebecca P. set a goal to lose 200 lbs. SHE DID IT. Throughout her journey, Rebecca used Slim in 6, TurboJam, TurboFire, Les Mills PUMP, P90X and Shakeology to lose 150 lbs in just over a year. Since then she has continued to (literally) work her butt off, and has hit her goal of losing 200 lbs. (Makes about 12 servings, 2 balls each) Ingredients: 1 cup all-natural smooth almond butter ¼ cup raw honey ¾ cup dry old-fashioned rolled oats 1 scoop Café Latte Shakeology ½ cup raw sliced almonds Method: For the best taste experience, use a blender and add ice. The more ice, the thicker it gets. Feel free to use any kind of milk or milk substitute (almond, rice, or coconut milk)—the more milk, the creamier it gets! Enjoy!
